 There are times when I get home late at night and I don’t feel like cooking.  Does this sound familiar?  Who said you had to cook?  I have at least, maybe twice, a “chunky salad” for dinner during the week.  In order to make this work, you should have at least 3 of your favorite items in the house.  At times, the salad is the least of the items on my plate.  Here are a few of my favorites:

1. Mixed greens

2.  Spinach

3.  Olives

4. Tomatoes

5.  Avacados

6.  Quinoa*

7. Garbanzo or kidney beans*

8. Frozen vegetables (yep, sometimes I get a mixed bag of veggies, throw them in the microwave, drain the water, and throw them on my salad)

9. Basil

10. Lentils*

11. Mushrooms

*My protein source.  Feel free to throw bits of a chicken, canned tunafish, or steak on your salad!
