I’m usually inspired to write my blogs based off of experiences. Sometimes I will come across a client, shed some light on their situation and think, “Others need to know this too.” My ah-ha moment came just the other day as I was wondering what I was going to make for dinner. Unfortunately I’ve been sick and far from motivated. I haven’t written anything, barely posted, and in no way shape or form have I planned or prepared.
As I move from the pantry to the refrigerator and back again, it hit me! Take a bland salad that I normally would put the basic lettuce and tomatoes in and spruce it up. First, I needed a protein. Beans are ALWAYS great to have on hand. I keep 2 cans of garbanzo beans, black beans, and white cannellini beans in the pantry at all times. I realized I hadn’t touched the garbanzo beans, so I grabbed them. Next, I went to the fridge. I took out the lettuce and noticed that the carrots were on their last leg- scooped them up. Lastly, the avocado in the basket on the counter was not far behind the carrots, so I grabbed it right along with the pomegranate. Boom! I blended what would have been a drab salad into something that was so delicious that even my 2 year old ate it! You read that right! She ate the other half of the pomegranate mixed with the rest of the garbanzo beans.
This goes to show that if you hadn’t planned dinner and have no idea what to do, you can make anything work. Open up your pantry and refrigerator and have some fun building a mountain of yumminess!
