It’s Summer, and what a way to start it off and beat the heat!  I haven’t made gazpacho in a couple of years, so when I took to the internet to find that stand out recipe, I couldn’t find anything that was quick and what I was looking for.  I grabbed a few things from the produce section of my local grocery store, and with a blender, bam!  This is a simple cold soup, bursting with flavor!

Recipe: Yields 8 cups

I chopped everything in big chunks and then added in the liquids, including the tomato paste.

-1 orange pepper

-1 small red onion

-6 roma tomates (about 1 1/2 lbs.)

-2 small cucumbers

-1/2 cup fresh cilantro

-3 cloves of garlic (might want to add 2 and go from there)

-2 tbs of tomato paste

-3 cups of tomato juice

-1/4 cup apple cider vinegar

Once you have chopped down the seasoning and veggies in the blender, add the liquids, pureeing to a consistency that you  like.  I divided up my soup in large mason jars and placed them in the fridge.  I had my first bowl in 2-3 hours- ENJOY!
