Stuffed Sweet Potatoes

A simple recipe for dinner, and a great way to get your veggies in:

Bake your sweet potato until tender.

While waiting for your sweet potato to cook, roast some veggies in a skillet on the stove, or add some good ingredients such as:

Ingredient Options:

  • [Leftover] roasted vegetables  – zucchini, yellow squash, etc.
  • Protein, such as grilled chicken.
  • Dried cranberries for a little sweetness
  • Cheese – depending on preference
  • Nuts – walnuts or almonds, chopped and toasted


Throw your ingredients into your sweet potato, season with some salt or pepper, and enjoy!
